Who is been following me for a while, knows that I’m Italian but I live in the UK.
Here is possible to find Italian food products, but the quality is different. Is it possible to find product from big companies as coffee or pasta for example, but it’s hard to find other things and Grisbí biscuits is one of them. Do you know what they are? They’re round chocolate biscuits filled with chocolate cream, absolutely delicious. Because I can’t find them here I decided to bake them. It was really easy and fast to do, it’s just important follow few tips.

In a bowl, mix well the chocolate spread with the sunflower oil (that will make the filling more creamy and less dry and hard after baking). Put in the freezer for 1 hour.
Meanwhile, let’s start making the dough.
In a bowl mix together the flour, the cocoa powder and the salt. Set apart.
If you have a standing mixer use the K-beater, unless take a bowl and a wooden spoon, and mix together the soften butter with the sugar until fluffy. Add the egg and mix well.
Start adding the flour mixer until combined in a ball. Cover and leave in the fridge for 30 minutes.
Preheat the oven to 170°C.
Once the dough is set take it out of the fridge, dust the table with some flour and roll it using a rolling pin 3-4 millimeters. Take 2 round cutters (5 cm and 5.5 cm diameters) and cut out the same amount of circles.
Take the chocolate spread out of the freezer and put one teaspoon of feeling in the middle of each small dough circle. Cover each base with one of the biggest circles, press well but gently to close the edges completely.
